Brussels sprouts and sausage gratin

    This is a cheap and simple recipe for a hearty casserole with Brussels sprouts and sausage. It definitely keeps you warm and nourished on those cold and dark winter days.

    Serves: 4 

    • 500g Brussels sprouts
    • oil for frying
    • 3-4 onions, sliced
    • paprika
    • 3 ready baked pork sausages, sliced
    • 125g soured cream
    • 125ml milk
    • minced fresh chives
    • salt and pepper to taste
    • 500g boiled potatoes, sliced
    • 50g shredded Gouda cheese (about 2 slices)

    1. In a pot of salted water boil Brussels sprouts until firm to the bite.
    2. Preheat oven to 200 C / Gas 6.
    3. In a frying pan heat oil and fry onion rings sprinkled with paprika until golden brown. Add sausage and fry till brown.
    4. In a bowl stir together soured cream, milk, chives, salt and pepper. Add potatoes, drained Brussels sprouts, onions and sausage and mix well.
    5. Transfer mixture to a buttered gratin dish and sprinkle with cheese. Bake for 35 to 40 minutes. During the last 10 minutes cover with aluminium for to prevent it from getting too brown.
