Wash and cut the courgettes in half lengthways. Scrape out the inside of the courgettes and make little "boats". Chop the pulp of the courgettes together with the parsley, garlic and salt in a food processor. Add the mince to the courgette mixture and mix well.
Grease a baking dish and place the courgette halves inside. Salt them a little and fill them with the beef mixture. Sprinkle breadcrumbs over the courgettes and then some olive oil.
Bake the courgettes for around 40 minutes in a preheated oven at 200 C / 180 C Fan / Gas 6.
Bake some potatoes at the same time as the courgettes to use as a side dish.
