About this recipe: The combination of squid, tomatoes and olives exudes fresh Mediterranean flavour. A great BBQ starter or light main.


Serves: 6 

  • 400g small squid, cleaned
  • 200g cherry tomatoes
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoons dry white wine
  • 4 sticks of celery with leaves, chopped
  • 30g pitted green olives, chopped
  • 30g pitted black olives, chopped
  • zest of 1 lemon
  • zest of 1 orange
  • salt to taste
  • white pepper to taste
  • To serve
  • drizzle of extra virgin olive oil
  • extra olives to garnish

Prep:15min  ›  Cook:15min  ›  Extra time:1hr marinating  ›  Ready in:1hr30min 

  1. Combine all ingredients, except for the extra olive oil and olives to serve. Marinate in the refrigerator for 1 hour. Stir every 10 minutes.
  2. Preheat the barbecue for medium high heat. Soak 6 bamboo skewers.
  3. Thread the skewers with the squid and tomatoes. Oil the barbecue cooking grate and place the skewers on top. Barbecue for 10 minutes, basting with the marinade halfway through.
  4. Serve the skewers with a drizzle of olive oil and extra olives to garnish.
