About this recipe:
I make these peppers with herbs and onions as a healthy and colourful side to meat and hot dogs when we are barbecuing.
olive oil, as needed for cooking
1 onion, cut in rings
1/2 teaspoon dried oregano
1/2 teaspoon dried dill
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 green pepper, seeded and sliced
1 red pepper, seeded and sliced
1 yellow pepper, seeded and sliced
- Generously cover the bottom of a large frying pan with olive oil and cook and stir the onion and herbs over a low heat for about 5 minutes, until translucent.
- Add peppers and cook and stir for about 20 minutes over low heat until soft. Stir occasionally. Remove from the pan using a slotted spoon and serve.
