Colourful peppers

    I make these peppers with herbs and onions as a healthy and colourful side to meat and hot dogs when we are barbecuing.

    Serves: 4 

    • olive oil, as needed for cooking
    • 1 onion, cut in rings
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried dill
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried rosemary
    • 1/2 teaspoon dried thyme
    • 1 green pepper, seeded and sliced
    • 1 red pepper, seeded and sliced
    • 1 yellow pepper, seeded and sliced

    1. Generously cover the bottom of a large frying pan with olive oil and cook and stir the onion and herbs over a low heat for about 5 minutes, until translucent.
    2. Add peppers and cook and stir for about 20 minutes over low heat until soft. Stir occasionally. Remove from the pan using a slotted spoon and serve.
