Raspberry meringue dessert

    A great quick dessert that can be made ahead, as it should be served well chilled.

    Serves: 6 

    • 400ml single cream
    • 2 teaspoons vanilla sugar
    • 100g small meringue
    • 250g frozen raspberries

    1. In a bowl beat cream with vanilla sugar until stiff. Coarsely chop the meringue.
    2. Add frozen raspberries in a glas bowl and spoon whipped cream on top. Sprinkle with meringue pieces, cover and refrigerate for 2 to 3 hours.
    3. Just before serving, stir the dessert where your guests can see it (it will look quite impressive) and serve.
