This is a quick and simple sponge base for a cake with a fruit topping such as strawberries or sliced peaches.

Ingredients
Makes: 1 sponge base
1 eggs
1 tablespoon cold water
50g caster sugar
50g plain flour
1 pinch baking powder
Method Prep:10min › Cook:15min › Ready in:25min
Preheat oven to 200 C / Gas 6. Grease a springform tin.
Separate egg. In a bowl beat egg white with water until soft peaks form. Gradually add sugar and beat until stiff. Add egg yolk and continue beating. Fold in flour and baking powder.
Pour mixture into prepared tin and bake until a toothpick inserted in the center comes out clean, about 12 to 15 minutes.
Tipp:
The sponge gets very fluffy, if you beat the dough in a narrow and high mixing bowl.
