Beef fillet steak with green peppercorn sauce

About this recipe: Beef fillet with green peppercorn sauce is a special treat in Italian restaurants. Why not try cooking it at home for a romantic dinner? This recipe makes it easy.


Serves: 2 

  • 2 (250g) sllices beef fillet, 1.5cm thick
  • 2 tablespoons green peppercorns
  • 25g butter
  • 1 shot Cognac or Brandy
  • 2 tablespoons Dijon mustard
  • 200ml fresh cream
  • 1 pinch salt
  • 2 tablespoons extra virgin olive oil

  1. Cover the fillets in green peppercorns on both sides. Using a rolling pin or meat mallet, beat the green peppercorns into the meat.
  2. In a frying pan, melt the butter and cook the fillets for 2 minutes on each side over high heat.
  3. Remove the fillets and keep them warm by covering with aluminium foil.
  4. Add the Cognac and the mustard to the frying pan. When thickened, add the cream and an additional sprinkle of peppercorns.
  5. Pour the sauce onto the fillets. Serve hot.

Very good, but I think there's a slight typo in the recipe. If, as instructed, you use two tablespoons of dijon mustard, you end up with a mustard sauce rather than a green peppercorn sauce. I suspect the recipe should say two teaspoons. - 04 Feb 2016
