Espresso custard with chocolate crumbs

    I still had two dry slices of chocolate cake leftovers that I did not want to go to waste so I and invented this dessert. Instead of leftover cake, you can also use chocolate biscuits, brownies, shortbread etc.

    Serves: 4 

    • 2 tablespoons custard powder
    • 500ml milk
    • 40g caster sugar
    • 2 teaspoons instant espresso
    • 150ml single cream
    • 2 slices leftover dry chocolate cake or biscuits, crumbled

    1. In a saucepan cook custard with milk and sugar, as instructed on the packet. Stir in instant espresso while the custard is still hot. Let cool down.
    2. In a bowl beat cream until stiff. Add cooled custard and beat until light and fluffy.
    3. Spoon alternating layers of custard and chocolate crumbs into a dessert dish. Chill well before serving.
