4 small and firm courgettes
1 spring onion
1 pinch sugar
1 lemon, juiced
50g toasted, peeled almonds
5 to 6 mint leaves

Slice the courgettes in very thin rounds, preferably using a mandoline. Slice the onion thinly.Combine the vegetables in a bowl sprinkle with sugar and lemon juice. Toss and let rest for about 20 minutes.
Meanwhile, chop the almonds, stack the mint leaves, roll them and slice them in skinny ribbons. Add the almonds and mint to the vegetables, dress with a generous amount of olive oil, season and toss well. Serve cold.
If you don't have almonds, don't head out to buy them, substitute other nuts. Pine nuts, hazelnuts or walnuts can all work in this salad. Basil can easily stand in for mint.
