    A simple but delicious recipe for rice with a bit of onion and carrot, and cooked in veg stock for flavour.

    Serves: 4 

    • 50g butter
    • 40g diced onion
    • 40g diced carrot
    • 125g long grain rice
    • 250ml vegetable stock
    • salt and white pepper to taste

    1. In an ovenproof casserole, sweat the onion and carrot in butter until they are soft and the onions are translucent.
    2. Wash rice and then add to the pan with the vegetables.
    3. Add stock, season with salt and pepper, then when it comes back to the boil, remove and cover with a cartouche (a piece of greaseproof paper pressed down to cover the contents of the pan).
    4. Put in the oven at 200 C / Gas 6, until all the liquid has been soaked up.

    Loved it! Added in some beef and mushroom to the recipe (needed to be used in the fridge!). Hearty, delicious and easy  -  16 Jul 2017
