Hearty potato and cheese soup

    This lovely potato and cheese soup hits the spot every time. Pretty quick to make, simple method and perfect served with some crusty bread.

    Serves: 6 

    • 500g potatoes, peeled and diced
    • 750ml stock, of your choice
    • 1 tablespoon vegetable oil
    • 1 leek, sliced
    • 1 garlic clove, minced
    • 150g petits pois peas
    • 200g cheese, of your choice
    • 200g cream cheese
    • 200g ham, diced
    • salt and pepper, to taste
    • fresh parsley, chopped

    1. In a saucepan combine the potatoes and stock and boil for about 20 minutes, until potatoes are soft.
    2. In a frying pan heat oil and cook leek, garlic and peas for a few minutes.
    3. Add cheese to the soup and heat, until melted. Stir in cream cheese and ham. Boil soup for another 5 minutes. Season with salt and pepper to taste, sprinkle with fresh parsley and serve.


    If you like your soup smooth in consistency, blend the soup using a handheld liquidiser in step 3 prior to serving.
