1 beef fillet, boiled and sliced
1 teaspoon extra virgin olive oil
1 tablespoon capers
25g cherry tomatoes, halved
50g fresh ricotta cheese
1 loaf wholemeal bread

In a frying pan, heat the oil over high heat. Add the capers and saute them with the slices of beef. Add the tomatoes and cook for 2 to 3 minutes. Add the ricotta cheese and stir well.
Toast the bread. Lay a few leaves of lettuce on a slice of toast. Top with the beef and cheese mixture, then sprinkle with balsamic vinegar. Top with another slice of toast to make a sandwich, and repeat with the remaining ingredients. Serve warm.
