Warm beef and ricotta sandwiches

    A surprisingly tasty combination of meat and cheese. This is a simple but satisfying supper or weekend lunch. Boil the beef fillet ahead of time, or use leftover roast beef.

    Serves: 6 

    • 1 beef fillet, boiled and sliced
    • 1 teaspoon extra virgin olive oil
    • 1 tablespoon capers
    • 25g cherry tomatoes, halved
    • 50g fresh ricotta cheese
    • 1 loaf wholemeal bread
    • 1 iceberg lettuce
    • 1 teaspoon balsamic vinegar

    1. In a frying pan, heat the oil over high heat. Add the capers and saute them with the slices of beef. Add the tomatoes and cook for 2 to 3 minutes. Add the ricotta cheese and stir well.
    2. Toast the bread. Lay a few leaves of lettuce on a slice of toast. Top with the beef and cheese mixture, then sprinkle with balsamic vinegar. Top with another slice of toast to make a sandwich, and repeat with the remaining ingredients. Serve warm.
