Chicken and chorizo one pot

    Gorgeous winter warmer, made in one pot. A family favourite! Chicken, chorizo, colourful peppers, courgettes, potatoes and butter beans all go into this decidedly delicious dish! You can use chicken breast instead of chicken thigh.

    Serves: 4 

    • 3 tablespoons olive oil
    • 4 chicken thighs, chopped into thirds
    • 1 chorizo sausage, chopped into chunky slices
    • 2 onions, sliced
    • 1 red pepper, sliced
    • 1 yellow pepper, siliced
    • 400g tin chopped tomatoes
    • 450ml (3/4 pint) of vegetable or chicken stock
    • 450g (1 lb) potatoes, chopped into medium chunks
    • 3 courgettes, sliced
    • 400g tin butter beans, drained
    • 1 handful of pitted black olives

    1. Heat oil in a large heavy based pan and fry chicken on one side until golden brown. Turn chicken and add chorizo; cook for 3 to 4 minutes, then remove from pan.
    2. Add onions and peppers to the pan and cook until soft.
    3. Tip in tin of tomatoes and stock and bring to the boil.
    4. Add potato chunks, then the chicken and chorizo back into the pan and cover and cook for 20 minutes. Add courgettes and cook for 10 minutes. Add butter beans and olives and simmer for a further 10 minutes.
    5. Serve straight from the pan and serve with fresh bread.


    This recipe was given to me by a friend about 10 years ago... My hubby likes to accompany this with either pickled red cabbage or beetroot, whichever we have in at the time!

    I have started to make this recipe regularly, it is delicious. We eat it with garlic bread or just lovely fresh crusty bread. I find it works best with tinned cherry tomatoes.  -  31 May 2013


    Loved this but my hub preferred it with pork shoulder instead of chicken.  -  19 May 2013


    Mine was a bit of a variation, as I left out the courgettes, yellow pepper and olives. Also, after frying off the ingredients I put it in the oven for one hour, and served it with some cauliflower and broccoli. My husband especially enjoyed this recipe. Great with crusty bread.  -  15 May 2017
