About this recipe: This bean dip is good with fresh veggies for dipping. You could use butter beans or cannellini beans instead of chickpeas for this recipe.

Serves: 2 

  • 1 (400g) tin chickpeas, rinsed and drained
  • 5 tablespoons light mayonnaise
  • 2 tablespoons finely chopped fresh parsley
  • 1 1/2 tablespoons lemon juice
  • 1 garlic clove, peeled
  • 1/4 teaspoon salt
  • pitta bread triangles to serve

  1. Add the chickpeas, mayonnaise, parsley, lemon juice, garlic and salt to a blender or food processor. Blitz in short bursts at first, then puree till smooth.
  2. Spoon into a serving dish and enjoyr straightaway, or chill for 1 hour in the fridge to allow flavours to mingle. Serve with pitta bread or fresh veggies for dipping.
