Heat the oil in a frying pan over medium heat then add the ham and fry for about 7 minutes, stirring often, until nicely crisp.
In a bowl whisk together eggs, 1 teaspoon chives, salt and pepper. Pour into the frying pan and allow to begin setting.
Sprinkle with cheese and fold over in half to create the omelette. Flip over and cook, until the egg has set and cheese inside has melted. Remove from the pan and garnish with the other teaspoon of chives and serve immediately.
