Veal with tomato sauce

    An easy Italian recipe of pan fried veal escalopes cooked with a fresh tomato, basil and garlic sauce.

    • 1 tablespoon extra virgin olive oil
    • 1 clove garlic, sliced
    • 500g cherry tomatoes
    • 4 rose veal escalopes (or pounded veal)
    • Pinch of salt
    • 2 tablespoons freshly chopped basil

    1. Heat the oil in a frying pan over medium high heat.
    2. Add the garlic and cook until it softens and turns golden. Add the tomatoes and cook for about 5 minutes. Stir them and smash them down a little while cooking.
    3. Add the veal and sprinkle with a little salt. Turn the escalopes after 5 minutes; add chopped basil and continue to cook for 1 or 2 minutes more. Serve!
