About this recipe: Salted cod fish or baccalà as it is called in Italy is a traditional dish eaten on Fridays and Christmas Eve. This "glutton's" version combines the fish with onions, potatoes, tomatoes, olives, pine nuts and raisins.


Serves: 4 

  • 900g salted cod fish fillets
  • 100g raisins
  • 3 medium potatoes
  • 2 small tomatoes
  • 15 pitted green olives
  • 2 large red onions
  • 100g pine nuts
  • passata, about 2 tablespoons
  • extra virgin olive oil

  1. Soak the salt cod in a cold bowl of water for 24 hours in the fridge. Change the water at least 3 times.
  2. Preheat the oven to 190 C / Gas 6.
  3. Wash the cod fillets, dry them well and cut them into 3cm cubes. Cut the potatoes and tomatoes also into 3cm cubes. Cut the olives into quarters and finely chop the onions.
  4. Put everything into a clear ovenproof baking dish; add some passata and drizzle over plenty of olive oil.
  5. Bake in the preheated oven for 45 minutes.
