Salted cod fish or baccalà as it is called in Italy is a traditional dish eaten on Fridays and Christmas Eve. This "glutton's" version combines the fish with onions, potatoes, tomatoes, olives, pine nuts and raisins.
A nice combination of salty, sweet, creamy and briny. We loved it. I did the prep ahead to time and it came together in no time when I needed to get dinner on the table. - 27 Sep 2012
