Pears in red wine

    A nice light dessert that's perfect for a dinner party or Christmas. It's best to use firm pears that aren't ripe yet so they hold their shape.

    Serves: 4 

    • 4 firm pears
    • 60g Demerara sugar
    • 280ml red wine
    • 280ml water

    1. Preheat oven to 180 C / Gas 4.
    2. Halve pears lengthways. Core and peel; place in a single layer in an ovenproof dish. Sprinkle with the sugar.
    3. Mix the wine and water and pour over the pears. Cover dish and cook in centre of preheated oven for about 50 minutes or until pears are tender. Lift pears out on to serving dish.
    4. Transfer the liquid in the dish to a saucepan and boil the cooking liquid briskly until reduced by half. Spoon over pears.
