Makes: 30 florentines
125g caster sugar
75g bran flakes lightly crushed
25g flaked almonds
25g sultanas, chopped
10 glace cherries, chopped
2 tablespoons crystallised ginger
125g plain chocolate, melted

Preheat oven to 150 C / Gas 2. Lightly grease three baking trays.
Melt butter; add caster sugar and boil for 1 minute. Stir in remaining ingredients except chocolate; mix well.
Spoon small balls of mixture on to baking trays. Keep well apart to allow for spreading (you will probably fit 10 on each tray).
Bake for 10 minutes until golden brown. Set aside to cool and harden for a few minutes. Transfer to a wire cooling rack.
When cool, drizzle or cover biscuits with melted chocolate. Once the chocolate has completely set, store in an airtight tin.
