About this recipe: A lovely, comforting sponge cake perfect for cold days in autumn and winter. Brilliant with a coffee or hot chocolate, and also good as a somewhat decadent breakfast treat.

Makes: 1 loaf cake

  • 150g golden caster sugar
  • 150g slightly salted butter, softened
  • 3 medium eggs
  • 1/2 to 1 teaspoon vanilla extract
  • 150g plain flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon (for cake)
  • 25g icing sugar
  • 1 teaspoon ground cinnamon (for icing)
  • Small amount of water for icing

  1. Preheat the oven to 180 C / Gas 4.
  2. Mix sugar and butter together until creamed. Beat eggs and vanilla extract into the mixture.
  3. Slowly fold in flour, baking powder and cinnamon until a smooth mixture is achieved. Spoon the mixture into a greased 900g (2 lb) loaf tin (or line the tin with parchment).
  4. Bake for 35 to 45 minutes, or until a skewer comes out clean when poked into the cake. Leave to cool.
  5. While cooling, mix icing sugar, cinnamon and water together to create a runny, sugary glaze. Drizzle over the cooling cake and leave to set.
