Cinnamon drizzle cake

    A lovely, comforting sponge cake perfect for cold days in autumn and winter. Brilliant with a coffee or hot chocolate, and also good as a somewhat decadent breakfast treat.

    Makes: 1 loaf cake

    • 150g golden caster sugar
    • 150g slightly salted butter, softened
    • 3 medium eggs
    • 1/2 to 1 teaspoon vanilla extract
    • 150g plain flour
    • 2 teaspoons baking powder
    • 2 teaspoons ground cinnamon (for cake)
    • 25g icing sugar
    • 1 teaspoon ground cinnamon (for icing)
    • Small amount of water for icing

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix sugar and butter together until creamed. Beat eggs and vanilla extract into the mixture.
    3. Slowly fold in flour, baking powder and cinnamon until a smooth mixture is achieved. Spoon the mixture into a greased 900g (2 lb) loaf tin (or line the tin with parchment).
    4. Bake for 35 to 45 minutes, or until a skewer comes out clean when poked into the cake. Leave to cool.
    5. While cooling, mix icing sugar, cinnamon and water together to create a runny, sugary glaze. Drizzle over the cooling cake and leave to set.

    Really easy to make and my cinnamon mad daughter loves it. Just making my third one! Only problem is it is all gone with 2 days so no idea how well it keeps. I kept exactly to listed ingredients.  -  29 Dec 2013
