Pick the best apricots; wash and remove the stones. Slice into chunks.
Place the apricots in a large pot over low heat. Add sugar a little at a time, mixing continuously and paying attention that nothing sticks to the bottom of the pot. The sugar will start to caramelise and the apricots will become mushy. Continue stirring for about 1 hour.
When the mixture starts to have the colour and consistency of jam, taste it to see if it is sweet enough. You can add more sugar if it tastes bitter. Spoon into warm, clean jars; cover and set aside to cool.
