Leftover pasta bake with salami

About this recipe: Got leftover pasta in the fridge? Mix it with cubes of scamorza cheese and salami and bake it in the oven. It'll be eaten up in no time.


Serves: 6 

  • 1 and 1/2 balls of scamorza cheese, sliced into cubes
  • Spicy salami, sliced
  • Extra virgin olive oil
  • Leftover pasta with sauce
  • Dried red chilli pepper flakes
  • Grated Parmesan cheese,as needed

  1. Preheat the oven to 200 C / Gas 6. Grease an ovenproof dish.
  2. Mix the leftover pasta, cheese cubes, and salami; pour into baking dish. Season with dried red chilli pepper and sprinkle lots of Parmesan cheese on top.
  3. Bake in the oven for about 20-25 minutes. Place under the grill for a few minutes to give it a golden crust.


You can use mozzarella in the place of the scamorza and leave out the chilli pepper if you don't care for spice.

A very nice way to use leftover pasta and create another meal. I warmed up the pasta and cheese in the microwave - topped with the Parmesan cheese and then it only took a few minutes under the grill. Easy for sure. - 17 Sep 2012
