Sausage and egg breakfast muffin

    Breakfast muffin with sausage, egg and cheese. Delicious! You can use different sausages to change the flavour.

    Serves: 1 

    • sunflower oil
    • 1 Lincolnshire sausage, casing removed
    • 1 free range egg
    • 1 muffin, split
    • 2 cheese single slices (the plastic-y variety works best for this)

    1. Heat a frying pan over medium heat with a little oil and place a non-stick ring in the pan. Press the sausagemeat into the ring and flatten out to fill the ring. Cook over medium heat until browned and cooked through. Remove and set aside, keep warm.
    2. In the same ring, gently crack an egg into it. Over low heat cook the egg, cover the pan with a lid. After a few minutes, very gently flip the egg over, still in the ring and cook for another couple of minutes.
    3. Meanwhile, toast the muffin.
    4. Layer the cheese and sausage patty on the bottom muffin. Top with the egg and a little tomato ketchup. Place the muffin top on and enjoy.


    Depending on the width of your cooking ring and size of sausage used, you may want to split the cooked sausage patty in half to have 2 equal rounds.

    This tasted delicious. I grilled the sausage Patty only used 1 slice of cheese and cheekily added a slice of Bacon.  -  18 Mar 2016
