Turkey and courgette meatloaf

    A healthier and lower in fat meatloaf option made with minced turkey, courgettes and white beans. Tastes great the next day on a sandwich with mustard.

    Serves: 6 

    • 2 tablespoons oil
    • 1 onion, chopped
    • 4 garlic cloves, minced
    • 2 courgettes, sliced
    • 1/2 teaspoon chilli powder
    • salt and pepper, to taste
    • 500g turkey mince
    • 1 (400g) tin white beans, drained and rinsed
    • 2 teaspoons prepared mustard
    • 2 teaspoons Worcestershire sauce

    1. Preheat oven to 190 C / Gas 5. Grease a 900g loaf tin.
    2. In a frying pan heat the oil and cook and stir the onion and garlic over medium heat, until translucent. Add courgettes and cook, stirring occasionally, until soft. Season with chilli powder, salt and pepper and stir well. Remove from heat and allow to cool a little.
    3. In a bowl combine minced turkey, beans, mustard and Worcestershire sauce and mix well with your hands. Fold in vegetables and transfer mixture to the prepared loaf tin.
    4. Bake in the preheated oven for about 1 hour or until the meat is no longer pink. Remove from the oven and allow to rest for 5 minutes before slicing and serving.

    Tried this tonight and it was really tasty. Omitted the beans because I didn't have any and doubled up on chilli powder for a bit of a kick. Also added lots more Woucestershire sauce (or Henderson's Relish as I'm in the North!) just cos I like the taste. Will definitely make again!  -  21 Dec 2014
