About this recipe:These walnut meringues taste like French macaroons but these are so much easier to make! My grandma used to make them with us and now I enjoy making them with my kids at Christmas.
Makes: 24 macaroons
2 egg whites
100g icing sugar
1 teaspoon vanilla extract
200g walnuts, quartered

Preheat oven to 150 C /Gas 2 and line two baking trays with non-stick baking paper.
Beat egg whites until very stiff. Gradually stir in icing sugar and vanilla extract. Carefully fold in walnuts.
Using 2 teaspoons, spoon small amounts of the mixture on to the prepared baking tray. Bake for 25-35 minutes. Let the meringues cool down completely, before carefully removing them from the baking tray.
