Place almonds into a frying pan and add the sugar and water. Stir and cook over medium heat, until most of the water has evaporated. Add vanilla sugar and continue cooking, stirring constantly, until sugar sticks to the almonds.
Place the almonds on a baking tray lined with baking parchment to cool. Transfer to a serving bowl and serve.
Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
