About this recipe:These raisin biscuits are really easy to make, but you'll want to plan ahead a little bit. The raisins have to soak in rum for at least 30 minutes and even better if left to soak overnight.
Makes: 65 biscuits
250g unsalted butter
250g icing sugar
1 packet vanilla sugar
400g plain flour
1 teaspoon baking powder
100g ground almonds

In a bowl combine raisins and rum and let soak for at least 30 minutes.
Preheat oven to 180 C / Gas 4 and line a baking tray with baking parchment.
In a mixing bowl beat together the butter, icing sugar, vanilla sugar and egg, until light and fluffy. In a separate bowl, mix together the flour and baking powder and fold in. Carefully stir in almonds and soaked raisins.
Spoon 2 teaspoons of the mixture over to the prepared baking tray to form each biscuit, leaving enough space between them.
Bake for 15 to 20 minutes until golden brown. Remove from the oven and allow to cool on a cooling rack before enjoying.
Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
