About this recipe:My children were so happy when I made these funny snowman cookies last Christmas for a party. You need some patience, but they are worth the effort.
Makes: 30 -40 cookies
250g plain flour
125g unsalted butter, at room temperature
1/2 lemon, grated
185g icing sugar
1 pinch cream of tartar
1 egg white

Place flour, butter, egg and lemon zest in a bowl and knead to form a smooth dough. Wrap in cling film and chill for 2 hours.
Preheat oven to 180 C/ Gas 4. Line 2 baking trays with greaseproof paper.
Sprinkle some flour on you work surface; roll out the dough and use a scone cutter or rim of a glass to stamp out large round cookies. Place on the prepared baking tray and bake for 10-15 minutes. Transfer to a cooling rack and allow them to cool down.
For the icing: Place egg white in a clean bowl and beat, until stiff. Mix icing sugar with cream of tartar and sift over the egg white, while beating constantly. Spread icing over the cookies and place a marshmallow on top of each, while the icing is is still soft. Press on lightly.
Place the remaining icing in different bowl and mix with food colouring of your choice. Draw the snowman face, scarf, buttons, etc.
