Pan fried kale with olives

    Soaking kale leaves in salted water is a little trick to make them tender.

    • 350g fresh green or black kale (Cavolo Nero)
    • olive oil
    • 6 Kalamata olives, pitted
    • lemon juice
    • salt and pepper

    1. Remove tough centre ribs from kale leaves. Soak leaves in a bowl of salted water for 15 minutes. Drain and chop.
    2. Heat oil in a large frying pan, Add kale and fry till kale is wilted. Add olives and season with salt, pepper and lemon juice to taste.
