Swordfish with lemon and herb dressing

    An Italian swordfish recipe known as Pesce spada alla calabrese. Best cooked under the grill or on the barbecue. The dressing is so fresh and summery. It's made with lemon juice, olive oil, garlic, parsley, oregano and mint.

    • 175ml extra virgin olive oil
    • 1 lemon, juiced
    • 3 cloves garlic, sliced
    • 1 tablespoon freshly chopped flatleaf parsley
    • 1 teaspoon freshly chopped oregano
    • 1 teaspoon freshly chopped mint
    • 450g swordfish fillets
    • Salt and pepper for seasoning

    1. Combine the olive oil, lemon juice, garlic slices and freshly chopped herbs in a mixing bowl; mix well and set aside for 15-20 minutes to let the flavors blend.
    2. Heat the oven grill or barbecue. Lightly season the swordfish fillets with salt and pepper. Cook on one side for 3 or 4 minutes, then turn and continue cooking on other side for a few minutes more.
    3. Transfer fish fillets to a warm plate; drizzle over herb dressing and serve immediately.
