Ginger crunch

    My grandchildren always asked me to make these crunchy treats, when they came to visit me. Good thing that I like them myself.

    Makes: 12 squares

    • 110g (1/4 lb) butter
    • 4 tablespoons sugar
    • 225g (1/2 lb) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground ginger
    • For the icing
    • 4 to 5 tablespoons icing sugar
    • 1/2 teaspoon ground ginger
    • 2 tablespoons butter
    • 1 teaspoon syrup

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl cream the butter and sugar, and then add the flour, baking powder and ginger.
    3. Press mixture into a greased 20cm (8 in) square tin.
    4. Bake in the preheated oven for 15 to 20 minutes, until golden brown.
    5. Heat the icing sugar, ginger, butter and golden syrup in a saucepan over a low heat and pour over cake while still hot.
    6. Let cool down and cut into 12 squares.
