Mascarpone and peach whip

    If you need a to make a quick dessert that tastes amazing and is really easy to prepare, this recipe is for you!

    Serves: 4 

    • 125g mascarpone cheese
    • 1 to 2 tablespoons peach juice from tinned peaches
    • 100ml single cream
    • 1 to 2 packets vanilla sugar
    • 4 peach halves (from tin)

    1. In a bowl whisk together mascarpone and peach juice. In a second bowl beat cream and vanilla sugar until stiff peaks form. Fold whipped cream into the mascarpone mixture. Fill cream into a piping bag and place in the fridge to chill for 20 minutes.
    2. Thinly slice the peach halves and arrange into 4 individual dessert bowls. Divide the mascarpone mixture between the 4 bowls using the piping bag to make a pleasing pattern.

    Vanilla sugar

    Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
