In a bowl whisk together mascarpone and peach juice. In a second bowl beat cream and vanilla sugar until stiff peaks form. Fold whipped cream into the mascarpone mixture. Fill cream into a piping bag and place in the fridge to chill for 20 minutes.
Thinly slice the peach halves and arrange into 4 individual dessert bowls. Divide the mascarpone mixture between the 4 bowls using the piping bag to make a pleasing pattern.
Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
