About this recipe: Ripe bananas, glace cherries, mixed dried fruit and walnuts are all combined with the usual cake ingredients in one bowl which makes this an easy loaf cake to make and clean up after.

Serves: 12 

  • 110g (4oz) cooking margarine
  • 50g (2 oz) glace cherries
  • 25g (1 oz) chopped walnuts
  • 175g (6 oz) dried mixed fruit
  • 4 ripe bananas, mashed
  • 225g (8 oz) self-raising flour
  • 175g (6 oz) caster sugar
  • 2 eggs

  1. Preheat the oven to 170 C / Gas 3. Lightly grease a loaf tin.
  2. Mix all of the ingredients together in a large bowl and beat until well blended; pour into the prepared loaf tin.
  3. Bake in the preheated oven until a skewer inserted into the centre of the bread comes out clean, 1 3/4 to 2 hours.
