Easy potato gratin

    I usually make this the potato gratin with a mixture of my favourite cheese, or whatever I have in the fridge. An easy vegetarian side dish for a variety of meals.

    Serves: 4 

    • 1kg potatoes
    • 60g butter, more for dotting
    • salt, to taste
    • 80g grated cheese
    • 125ml milk
    • 2 egg yolks

    1. Preheat the oven to 175 C / Gas 3/4.
    2. Bring a large saucepan of water to the boil then add the potatoes and cook until just tender but still quite firm in the middle. Drain, peel and cut into thin slices.
    3. In a bowl cream the butter until light and fluffy. Stir in potato slices and and layer them into a greased casserole dish. Sprinkle cheese in between the layers and add a top layer of cheese.
    4. In another bowl whisk together egg and milk and pour over the potatoes. Dot the top with butter.
    5. Bake for 20 minutes in the preheated oven, until golden brown and the potatoes are tender through. Remove from the oven and serve.
