    About this recipe: Spicy and fresh green curry Thai soup (like a laksa). Very easy and quick to make for a light midweek meal.

    Serves: 2 

    • 2 white fish fillets, cut into pieces
    • 2 onions, sliced
    • 1 carrot, sliced
    • 1 courgette, sliced
    • 1 leek, sliced
    • 1 potato, peeled and cubed
    • 1 fish stock cube
    • 1 teaspoon Thai green curry paste
    • 1 inch piece root ginger, grated
    • 1 tin coconut milk
    • 1 tablespoon chopped fresh coriander
    • squeeze of lime or lemon juice

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Add all ingredients to a saucepan, except for the coriander. Add one tin full of water and simmer for 30 minutes. Sprinkle in coriander and lime or lemon juice and serve.
