Chocolate banana spread

    Can't remember where I saw this recipe, but tried it last year, and it's fab! A great way to use up old bananas, and the alcohol adds a nice adult touch to the jam/spread. I love this on pancakes! Recipe below is enough to fill one jam jar.

    Makes: 1 jam jar

    • 2 old, brown bananas
    • 140g sugar
    • 70ml water
    • 200g chocolate (I prefer dark, but milk works too)
    • 2 teaspoons amaretto or dark rum (your choice)

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Mash the bananas, add the sugar and water to a heavy bottomed pan and bring to the boil. Keep the pan boiling for 2 to 3 minutes until the banana mixture is beginning to get thick and syrupy.
    2. Take off the heat and leave for a few minutes. Then break the chocolate in and stir until melted. Add the amaretto and stir. (Don't be tempted to add more chocolate, or when it cools, it will set solid!)
    3. Pour into a jam jar (or if you don't have one, then a small dish) and leave to cool.

    Storage tip

    If in a sealed jar, will last 3 months. Opened jar, or open dish, will last 2 weeks in the fridge.

    This is really easy, very quick and totally delicious. I can think of a million different uses for the spread, and a lot of fruit and chocolate combos to try as variations. I didn't have any rum, so I used advocaat, which gave a lovely rich taste to the dish.  -  26 Feb 2017
