Can't remember where I saw this recipe, but tried it last year, and it's fab! A great way to use up old bananas, and the alcohol adds a nice adult touch to the jam/spread. I love this on pancakes! Recipe below is enough to fill one jam jar.
If in a sealed jar, will last 3 months. Opened jar, or open dish, will last 2 weeks in the fridge.

This is really easy, very quick and totally delicious. I can think of a million different uses for the spread, and a lot of fruit and chocolate combos to try as variations. I didn't have any rum, so I used advocaat, which gave a lovely rich taste to the dish. - 26 Feb 2017
