Glazed lemon pound cake

    A classic recipe for a moist and delicious lemon pound cake with an easy to make lemon glaze. I bake this one a lot for my family.

    Makes: 1 lemon cake

    • Cake
    • 110g (4 oz) margarine
    • 110g (4 oz) caster sugar
    • 110g (4 oz) self raising flour
    • 2 eggs
    • 1 tablespoon lemon curd
    • zest of 1/2 lemon
    • Topping
    • 2 tablespoons sugar
    • 1 1/2 tablespoons lemon juice
    • zest of 1/2 lemon

    1. Preheat oven to 180 C / Gas 4. Line a 2 lb loaf tin with parchment and grease it.
    2. In a mixing bowl cream margarine and sugar until light and fluffy. Add eggs and flour alternately, beating well after each addition. Stir in lemon curd and zest and mix well.
    3. Transfer mixture into the tin and bake for 45 minutes.
    4. To make the topping mix sugar, lemon juice and lemon zest until well combined. Pour over the cake, while it is still warm.
