Dutch apple traybake

    A really simple apple cake traybake recipe, baked on a tray and sprinkled with cinnamon and sugar. Serves perfectly with vanilla ice cream.

    Ingredients
    Makes: 16 squares

    • 225g (8 oz) plain flour
    • 2 teaspoons baking powder
    • 50g (2 oz) butter
    • 50g (2 oz) caster sugar
    • 4 tablespoons milk
    • For the topping
    • 450g (1 lb) cooking apples, peeled, cored and sliced
    • 50g (2 oz) caster sugar
    • 1 teaspoon cinnamon
    • 2 tablespoons lemon juice

    Method

    1. Preheat oven to 200 C / Gas 7. Lightly grease a 28x18cm (11x7 in) tin.
    2. In a large mixing bowl, combine the flour and baking powder. Rub in the butter and then mix in the caster sugar.
    3. Gradually add the milk, mixing each time to eventually form a firm dough mixture. Press the dough into the tin.
    4. Arrange the apples over the dough, and sprinkle with the sugar, cinnamon and lemon juice.
    5. Bake in oven for 30 minutes. Leave to cool and cut into squares.
