About this recipe: This is a recipe for a wintery casserole dish with pork fillet and prunes with a creamy white wine sauce. Serve with potatoes.

Serves: 4 

  • butter for frying
  • 1 small onion, finely diced
  • 2 pork fillets, about 900g (2 lb)
  • 1 tablespoon flour
  • salt and black pepper to taste
  • 12 prunes, stoned and soaked in 300ml (½ pt) dry white wine
  • 1 tablespoons redcurrant jelly
  • 150-300ml (1/4 - 1/2 pt) double cream

  1. Melt butter in large frying pan and gently fry onion.
  2. Add pork and cook until browned. Stir in flour, salt and pepper.
  3. Add prunes and wine. Bring to boil and cover.
  4. Cook either on top of cooker or transfer to a casserole dish and bake in moderate oven for 45 minutes to 1 hour until pork is tender.
  5. Stir in redcurrant jelly and cream on top of cooker. Do not boil. Sauce should be thick and glossy.
