About this recipe: Creamy and comforting, this is a delightful casserole containing potatoes, leeks and bacon. Relax as this casserole warms you up on a cold winter night.


Serves: 4 

  • 150g bacon, diced
  • 2 onions, sliced
  • 2 leeks, sliced
  • 1 tablespoon fresh parsley, chopped
  • 500g boiled potatoes, sliced
  • 5 slices cheese
  • 250ml milk
  • 2 eggs
  • salt and pepper to taste
  • ground nutmeg, to taste

  1. Preheat oven to 180 C / Gas 4.
  2. In a skillet or frying pan, fry bacon until it releases the fat. Add onions and cook and stir until translucent. Add leeks and parsley and continue cooking for a few more minutes.
  3. Layer potato slices, bacon-leek mixture and cheese in a casserole dish. The last layer should be potatoes.
  4. Whisk together milk and eggs, stir in salt, pepper and nutmeg to taste and pour into the casserole dish.
  5. Bake for about 45 minutes until set. Remove from the oven and serve.
