Hot pear and blue cheese salad

    This makes a lovely Christmas starter salad. Pears are fried in butter and honey then served on top of a mixed salad of lettuce, Parma ham and blue cheese.

    Serves: 2 

    • 1/2 head lettuce, torn
    • 8 cucumber slices
    • 1 small tomato, sliced
    • 2 slices Parma ham, torn
    • 50g Dolcelatte cheese, crumbled
    • 1 teaspoon butter
    • 1 teaspoon olive oil
    • 1 pear, peeled and quartered
    • 1 teaspoon honey
    • 1 tablespoon balsamic vinegar

    1. Combine the lettuce, cucumber, tomato, Parma ham and Dolcelatte in a large bowl.
    2. Melt the butter and olive oil in a small saucepan over medium heat. Fry the pear quarters until they start to soften and colour, about 4 minutes. Gently stir in the honey to coat the pears; add the balsamic vinegar.
    3. Place the pears on top of the salad and toss with remaining pan juices.
