    A moist, dense fruit cake packed with dried sultanas, lemon and orange zest and topped with ground almonds instead of whole.

    Serves: 6 

    • 150g butter
    • 150g sugar
    • 225g plain flour
    • 1 teaspoon baking powder
    • 3 eggs
    • 175g currants
    • 175g sultanas
    • grated orange zest
    • grated lemon zest
    • 75g mixed peel
    • 75g glace cherries
    • 75g ground almonds

    1. Preheat oven to 170 C / Gas 3. Line a 20cm (8 inch) cake tin with baking paper.
    2. Cream butter and sugar in a large bowl until lighter in colour. Stir in all of the remaining ingredients except for the ground almonds.
    3. Spoon the mixture into prepared cake tin and cover the top with ground almonds.
    4. Bake for 2 to 2 1/2 hours, or until a skewer inserted in the centre of the cake comes out clean. Remove fro the tin and set aside to cool.
    5. Store in an airtight tin.
