1 tablespoon oil
2 large shallots, chopped
1 (400g) tin chopped tomatoes
2 garlic cloves, crushed
2.5cm (1 in) fresh root ginger, grated
1/2 teaspoon chilli powder
3 to 4 courgettes, shredded
salt and pepper to taste
fresh parsley, for garnish

Heat oil in a saucepan, add shallots and cook for 5 minutes, without browning. Add tomatoes, garlic, ginger and chilli powder and bring to the boil. Simmer uncovered for 20 minutes until thick. Stir in courgettes, season and cook for 5 minutes. Season with salt and pepper to taste and garnish with fresh parsley.
