Indian style courgettes

    These Indian style courgettes taste very special and aromatic with fresh ginger and garlic. Serve it with your curry for an extra serving of vegetables.

    Serves: 4 

    • 1 tablespoon oil
    • 2 large shallots, chopped
    • 1 (400g) tin chopped tomatoes
    • 2 garlic cloves, crushed
    • 2.5cm (1 in) fresh root ginger, grated
    • 1/2 teaspoon chilli powder
    • 3 to 4 courgettes, shredded
    • salt and pepper to taste
    • fresh parsley, for garnish

    1. Heat oil in a saucepan, add shallots and cook for 5 minutes, without browning. Add tomatoes, garlic, ginger and chilli powder and bring to the boil. Simmer uncovered for 20 minutes until thick. Stir in courgettes, season and cook for 5 minutes. Season with salt and pepper to taste and garnish with fresh parsley.
