Halloumi and red pepper stacks

    I love the combination of the sweetness of the roasted red peppers, and the saltiness of the halloumi. Great one to serve to vegetarian friends!

    Serves: 2 

    • 2 red peppers
    • 2 thick slices halloumi
    • 1 squeeze lemon juice

    1. Roast or grill the peppers until just soft enough to remove skin. (Don't overcook at this stage though, as they will be cooked again.)
    2. Remove the top of the peppers, skin, then halve and core them.
    3. Place a slice of the pepper on an oiled tray. top with a slice of halloumi, add a dash of lemon juice, then top with another slice of pepper.
    4. Place in an oven at about 180 C / Gas 4 for 15 to 20 minutes. Serve with a side salad or couscous.


    You can add other flavours to these stacks. Try adding a sliced chilli or jalapeno. Or sliced black olives and a sprinkle of oregano.
