    About this recipe: Garlic and red pepper add a lovely flavour to this smoked sausage casserole. If you would like to bulk it out more, add a tin of baked beans.

    Serves: 4 

    • 2 tablespoons sunflower oil
    • 1 onion, sliced
    • 1 clove garlic, crushed
    • 1 red pepper, deseeded and sliced
    • 1 (400g) tin chopped tomatoes
    • 1 tablespoon tomato puree
    • 1 (440g) tin mixed beans in tomato sauce
    • 225g (8 oz) smoked pork sausage, thickly sliced
    • 1 tablespoon Worcestershire sauce
    • Salt and freshly ground black pepper, to taste

    Method

    1. Heat the oil in a saucepan over medium heat. Cook the onion until soft, about 3 to 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the red pepper, tomatoes and tomato puree; simmer for 15 minutes.
    2. Mix in the beans, sausage, Worcestershire sauce, salt and pepper. Gently simmer until the sausage is cooked through, about 10 minutes.
