Separate the eggs and whisk up the whites to a fluffy whiteness. You may want to add the whites from another couple of eggs and discard the yolks or use them in something else.
Place the cheese on the untoasted side of the bread as if you were going to make cheese on toast.
Spoon the egg whites onto the cheese with an equal amount on each. Using the back of a spoon make a small indentation in the top of the egg whites and drop in the yolk
Absolutely delicious and so easy to make! I didn't realise eggs could taste so good, I may never make another type of egg breakfast again!
The only thing I did differently was used grated cheese as that was what I had in the fridge!
