About this recipe: Kids are sure to eat their green veg when you bring this creamy broccoli bake to the table! The crushed cornflakes on top add delicious texture.

Serves: 4 

  • 450g broccoli, cut into florets
  • 1 (295g) tin condensed cream of mushroom soup
  • 250g mayonnaise
  • 110g grated Cheddar cheese
  • 2 eggs, beaten
  • 2 tablespoons finely chopped onion
  • 50g cornflakes, crushed

  1. Preheat the oven to 180 C / Gas 4.
  2. Cook the broccoli in a large pan of salted boiling water until tender, about 4 minutes; drain. Place the broccoli in a ovenproof dish.
  3. Mix the soup, mayonnaise, cheese, eggs and onion in a bowl. Pour the soup mixture over the broccoli; top with crushed cornflakes (you can also use breadcrumbs).
  4. Bake in the preheated oven until hot and bubbly, about 45 minutes.


Use half cauliflower, half broccoli instead of just broccoli. Or add one or two chopped carrots to the mixture, too.
