Scottish fruit and oat scones

    Filled with oats and dried fruit, these Scottish scones have a gorgeous hearty texture that's oh-so satisfying.

    Makes: 8 scones

    • 85g (3 oz) self raising flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 110g (4 oz) oats
    • 55g (2 oz) butter
    • 55g (2 oz) caster sugar
    • 55g (2 oz) dried fruit
    • 1 egg
    • 5 tablespoons milk, plus extra for brushing

    1. Preheat the oven to 220 C / Gas 7. Lightly flour a baking tray.
    2. Sieve flour, baking powder and salt together. Stir in oats, butter, sugar and dried fruit. Beat the egg with the milk, then stir into dry ingredients.
    3. On a floured board, lightly knead and shape dough into a 20cm circle. Place on the prepared baking tray and cut into 8 or 12 triangles; brush the top with a little milk.
    4. Bake in the top of the preheated oven until golden brown, 12 to 15 minutes.
