Makes: 8 scones
225g (8 oz) plain flour
3 teaspoons baking powder
1/4 teaspoon salt
55g (2 oz) butter
110g (4 oz) grated Cheddar cheese
120ml (4 1/2 fl oz) milk
milk or beaten egg for glaze

Preheat the oven to 220 C / Gas 7.
Sift flour, baking powder and salt together. Rub in the butter until it resembles coarse breadcrumbs. Mix in the grated cheese, reserving a little for the top, and bind together with milk to make a soft dough.
Gently roll out onto a floured surface and shape into a round. Place on a baking tin and cut into 8 triangles. Brush with milk or egg and sprinkle with remaining cheese.
Bake near the top of the preheated oven until golden brown, 8 to 10 minutes.
