Sweet and spicy apple chutney

    This spicy and sweet apple chutney is great to serve with a cheese board or as a side to roast pork or pheasant. For best results, allow 2 weeks for flavours to develop and consume within 6 months.

    • 1kg apples, peeled and cut
    • 2 tablespoons pickling spice, tied in a muslin cloth
    • 600ml vinegar
    • 450g soft brown sugar
    • 225g sultanas or raisins, chopped
    • 7g ground ginger
    • 2 teaspoons salt

    1. Cook apples, pickling spice and vinegar in a large heavy-based saucepan, until soft, about 10 minutes. Stir in the sugar and bring to the boil for 3 minutes; add the sultanas, salt and ginger.
    2. Simmer over very low heat for 1 hour, stirring from time to time with a wooden spoon, until thickened.
    3. Fill piping hot chutney into sterilised jars and close with lids immediately. Turn the jars upside down and let cool, then store upright in a cool, dry place out of direct sunlight.
